Capsaicin irritates the pain receptors on the
tongue, not the taste buds. When your brain gets the signal from the pain
receptors that something is happening in your mouth, it triggers the release
of endorphins and other bodily chemicals that are intended to begin the
healing process. When the endorphins reach the tongue and they discover that
there is nothing going on they dissipate rapidly. The rush of endorphins
causes you to feel a slight "high". It is this high that brings on your
addiction to capsaicin and hot foods. |
